I will use less milk for the béchamel next time just for personal preference.

Hi, I will definitely be making this for the holidays. My question is : do I have to defrost it after I take it out of the freezer. I plan on making it and freezing it and then baking it on the day.

Agreed – this recipe is absolutely divine, but I took him at his word with “six of the largest aubergines you can find” and ended up with easily TWICE the amount needed for the dish. A total mg or oz measurement would be v helpful – guess I need to try doing that next time and record the results!
